I had so many things that I wanted to write about this week, including another update on this potty training thing, BUT my husband surprised me and Olivia with not one, not two, but THREE consecutive days off, and we don’t take that for granted, which also means that I wasn’t on my computer too much. Yesterday he went back to work and I swear Olivia and I were just sitting on the couch staring at each other like, What do we do now?. I think it’s safe to say he’s pretty loved around these parts.
Anyway, Dominic and I have really been trying to make a conscious effort to eat better, and we’re having a good time finding our favorite dishes, in their skinnier form. I decided to end the week with a really delicious, really simple, really easy recipe.
It’s also healthy.
And it involves bbq sauce.
Remember my friend who had her baby in November? Well, while we were there, she treated Olivia and me to these really tasty personal pizzas, made out of whole wheat wraps! I have had this huge craving for BBQ chicken pizza for the past couple of weeks, but since we’re watching what we’re eating, ordering a pizza was out of the question.
But I really wanted that pizza.
So, I decided to head to the store and buy a few things to make the skinny version of my craving.
Here’s what you need:
-Whole wheat tortilla wraps
-Your favorite BBQ sauce
-Chicken. Any kind. (I went with rotisserie because I was in a bit of a rush.)
You preheat your oven to 350. Place how ever many individual pizzas you want/can fit on a pan. Put two tablespoons of BBQ sauce, 1/4 cup of cheese, a few pieces of pulled chicken……and who am I kidding of course I added a little more cheese on top, for good measure, you know. Put it in the oven for about 10 minutes or until the cheese starts to brown and voila! Skinny BBQ Chicken Pizza. Bonus points if you’re a thin crust kind of person (which I totally am), because that’s exactly what it tastes like. A very thin crusted pizza. You can’t even taste the fact that it’s wheat or has more grains/fiber/a bunch of healthy stuff, and I love that the most!
We’ve only made the pizza in a BBQ Chicken form, but it’s quickly become our go-to lunch! I’m excited for all the possibilities, including my favorite- Pesto Chicken and Mushroom Pizza! Olivia even loved it, although I’m sure she’d prefer just a regular old cheese pizza!
