I have to admit, I am not big on carving pumpkins. I honestly don’t see the point because a few days after you carve them and put them outside, they start to mold and/or eaten by little animals. BUT, I continue to carve at least one every year for two reasons. One, for Olivia and two, pumpkin seeds!
Olivia was very on board with carving the pumpkins, although of course she didn’t do any of the carving. We bought cool sticker carving sets and basically you just picked the template you liked best, put the stickers on your pumpkin, and carve around the stickers. Olivia obviously loved the sticker part, and the picking out the template part.
She also loved the part where we put candles inside her pumpkin and turned the lights off.
Basically, she loved every part except the carving (only because she couldn’t though) and taking the seeds out of her pumpkin. “So ‘custing!”
I don’t have any pictures of our seeds but since we had two pumpkins, we did two separate batches of seeds. One batch with just a little oil and salt and then my batch had lime and salt. They are seriously so good and super simple- wash off the seeds, pat them dry and spread on a greased baking sheet. Drizzle oil and squeeze fresh lime juice, salt once before they go in and maybe add a little more salt (and maybe a little more lime juice ;) after they’re done! Bake for 25 minutes at 375!
P.S. Have I ever mentioned how horrible the lighting is in my house at night?! So bad!
